I Made a Poke Cake, And It’s Every Bit As Good As I Remember

It’s the Sweet Summer of Cake at my house. I’ve been dusting off old recipes and remembering old baking skills, experimenting with cakes I used to make when I was a kid in the 1970s.

First stop on the retro cake rail line was a chocolate snack cake. Though I made it from scratch instead of a mix, I was trying to recreate a Betty Crocker Snackin’ Cake, which first hit supermarket shelves in the early 70s. The ads said it was a cake so simple, it could be mixed up in the pan with just a fork, baked, sliced, and eaten with your hands. They were right.

At home, we always had a Snackin’ Cake in the pantry just in case we were craving something sweet and didn’t want to wait too long to get it.
